I made Chicken Chow Mein last night and it turned out great! Here's the recipe.
2 chicken breasts, thawed and cubed
1 bag frozen stir fry veggies
1 bag lo mein noodles (can't remember bag size)
soy sauce
cornstarch
olive or canola oil
3-4 garlic cloves
1/2 of a medium onion
Mix 2 TB soy sauce and 1 TB cornstarch in bowl. Add chicken to marinate at least 5 minutes. Cut up garlic into thin slices. Cut up onion.
Boil water and cook noodles. Heat 3 TB (ish) oil in a large fry pan. Add chicken and marinade sauce. Cook about 6 minutes until chicken is almost done. Meanwhile, cook veggies according to package instructions. Add a little extra soy sauce to the veggies while cooking. When the noodles are done, drain and rinse in ice water or cold water to prevent sticking.
When the chicken is almost done, add garlic, onion, and a little more oil if necessary. Stir fry for about 1-2 minutes. Add noodles to pan (and veggies if there's room). Stir fry another couple of minutes adding extra soy sauce if desired and some pepper.
Mix with veggies and serve!

funny that you posted this, I did something very similiar the other day, but used cooked spaghetti as lo mein noodles, and made the sauce with pineapple juice and soy sauce and cornstarch, and added pineapple to the veggies that i cooked, it was pretty delicious. We're doing tempura tonight :) with sweet and soy sauce.
@Kshorkey - I just seem to get in food ruts sometimes. I clipped this recipe out of parents magazine and then changed it to suit our family. But it was good. I'm always looking for new recipe ideas. (One dish recipes are my favorite)
@christygraves - I get sick of everything so quick we have to try new things all the time! Another new thing we tried this week that was pretty delicious, was some polsa kielbasa (sp?) cooked in some oil, with some different colored bell peppers, onion, garlic, and used a dry soup mix as sauce served over rice. My boyfriend who's a super picky eater really liked it, and so did my daughter who I think may have gotten the picky gene from her dad.
My mom always sends me tons of cooking magazines and i love reading and looking at them but this week i decided to try some and man were they good :)
